Actress and restaurateur Eva Longoria celebrated the grand opening of her latest venture, SHe by Morton’s, with a red carpet and VIP party at the restaurant and nightlife spot in Crystals at CityCenter on Saturday night.

Her guest list could certainly be described as eclectic, as it included business partner Tilman Fertitta; “The Bachelor” hunk Jake Pavelka, who was a guest host at Chippendales at The Rio last year; former U.S. House of Representatives member from Arizona Gabrielle Giffords and her astronaut husband Mark Kelly; and three bachelors on the new reality TV dating show “Ready for Love,” for which Longoria is executive producer and Bill Rancic and Giuliana Rancic host.

The eligible bachelors -- Ben Patton, Tim Lopez and Ernesto Arguello -- danced the night away with Longoria, who donned a knee-length LBD and bright-red lipstick. Longoria is divorced from Tony Parker of the San Antonio Spurs.The group dined at the restaurant before moving upstairs to the club, where they watched theatrical performances including a James Bond vignette and a laser/DJ performance by Mobius 8.

Pavelka, sans Emmy Award- winning and Broadway star girlfriend Kristin Chenoweth, kept mum on his new relationship but divulged that he had special Valentine’s Day plans for her. Pavelka predicted that this season’s winner will be Tierra and even mentioned ex-girlfriend Vienna Girardi, quipping, “You know you’re over it when you can joke about it!”

Giffords and Kelly are good friends with restaurateur tycoon Fertitta. Last week, Kelly and Giffords spoke in front of the Senate and President Obama to strengthen gun regulations. Thanks to Denise Truscello of WireImage for her photo gallery.
