At the new Old Homestead, this salad shines as bright as the beef

This salad contains the kitchen sink, hence the name on the Old Homestead menu.

The new Old Homestead Steakhouse—our Vegas version of the 143-year-old Manhattan meatpacking district dining icon—is an instant classic, a finely tuned, serious-about-beef experience. But after my first trip, even though the New York strip and New York cheesecake were impressive, it’s a gentler dish that I keep hungering for: a salad.

Not just any salad, mind you, but a fresh take on a quintessential steakhouse salad called the kitchen sink. Scattered artfully around crisp greens kissed with champagne vinaigrette are plump cocktail shrimp, julienned slivers of spicy salami, chunks of slab bacon and blue cheese, and scattered bits of avocado, tomato and hearts of palm. Sounds like a lot for one salad (even a $17 salad), right? Yet somehow it all comes together, a series of light but satisfying bites, a magnificent combination. It even leaves room for a big, juicy steak, and that’s the point.
