Chinese New Year is upon us again, and in honor of the Year of the Dragon, China Poblano’s Shirley Chung has unveiled some special menu items. I suggest trying the Golden Dragon ($53.88), a dish consisting of a whole, stir-fried lobster—“dragon shrimp” in Chinese—coated with house-cured egg yolks through a technique called “golden.” By wok-frying it, Chung manages to transform the buttery beast into an even more delectable offering. Also notable is the Fire Phoenix ($23.88). Young chicken, oven roasted and subsequently fried until crispy, is served with Sichuan peppercorn salt alongside a pork rind, resulting in a wonderful combination of smoke and salt. Pair with the China Paloma ($12.88), a Chinese version of the classic tequila-based Mexican cocktail served with lavender tea-infused grapefruit syrup, for a sweet balance.
