Rachel’s Kitchen has expanded its restaurant in the District at Green Valley Ranch and is planning to open two more locations this year.
The District location was remodeled to enlarge the dining area by 50 percent. The restaurant plans to show off the new space Feb. 2 during a “Snow Day” celebration of its third anniversary, including live music and a children’s “snow slope” for sledding.
Two months after opening a third restaurant in the Summerlin area, Rachel’s Kitchen has two more in the works this year: downtown and in the north valley in the Centennial Hills area.
Rachel’s Kitchen is known for its breakfast, wraps, sandwiches, pastas and smoothies. Named after the daughter of owner Debbie Sofer-Roxarzade, the original restaurant is at Hualapai Way and Desert Inn Road in west Las Vegas.
