After a 14-month closure during the coronavirus pandemic, a renovated Bacchanal Buffet at Caesars Palace is set to reopen for dinner starting May 20.

The buffet’s seafood, carving, American and Latin kitchens, as well as the entrance and dining room, have all received major upgrades and improvements, officials said.

Bacchanal Buffet, which opened in 2012, has been “a world-renowned culinary destination for many years," said Sean McBurney, Caesars Entertainment regional president.

"We look forward to welcoming our guests back and seeing their faces light up when they experience and, most importantly, taste all the new enhancements,” he said.

The buffet will be open for dinner from 4 to 10 p.m. Thursdays through Mondays. For the first time, Bacchanal will accept reservations through OpenTable.com.

The updated design of the buffet reflects the original concept of nature, with natural textures and materials like glass and stone woven throughout, reminiscent of ice caves, mountains and more, officials said.

The cornerstone of the buffet remains its nine open, interactive kitchens. And with the new design, guests will have an even clearer view of the action, officials said.

Open-fire roasting grills will be used to prepare prime rib and other cuts, while new steaming and refrigerated display systems will ensure dishes like crab legs are served market-fresh, according to a news release.

In addition to the design enhancements, Bacchanal will introduce more than 30 new dishes, including Japanese wagyu hot dogs and spicy seafood boil bags served from roaming dim sum-style food carts, chipotle bourbon barbecue oysters, new vegan items, authentic Roman-style pizza, and deserts like death by chocolate cupcakes.

The buffet will implement health and safety protocols, including more frequent cleaning and sanitization. Caesars has also implemented a health screening program for all employees.
