It’s a first for Las Vegas — executive pastry chef and chocolate countess Carol Garcia has the first true bean-to-bar chocolate “factory” in the Silver State. It’s located in the new-look, 30,000-square-foot, 300-plus-seat Hexx Kitchen + Bar in Paris Las Vegas that took the space of Sugar Factory American Brasserie.

Carol walked me through the process of opening sacks of cacao beans from Ecuador, Venezuela, Peru, Tanzania and Madagascar — all from farms 20 degrees north and south of the Equator.

The beans are roasted, crushed, sorted and “spun” for two days to liquefy before being poured into molds that make the flavors. It’s all the skill of a sommelier!

Carol points out that Hexx chocolate is unlike many other types of chocolate because Hexx is created from only two ingredients — cacao beans and organic palm sugar.

I fell in love with the Tanzania with its hints of cherry, coffee and lemon. The Ecuador was the smoothest with flavors of almond, sweet marzipan and flowers. The Madagascar has strong fruit flavors with an emphasis on citrus.

The new restaurant is a stunning masterpiece of design with half the guests seated on the front patio and the other half in the dining rooms all open to the Strip. Even in early evening when the temperatures were up in the high 90s, the air conditioning and gentle breeze kept everybody cool.

Hexx is a restaurant, chocolate experience and retail store. Chefs Matthew Silverman and Matthew Piekarski have raised the level of food and service for their around-the-clock breakfast, lunch and dinners.

There’s an all-warm-white, hip Florida look to the restaurant with its bar area of high-top communal tables, and the contemporary upscale decor is balanced with chocolate hues, earth tones, rich woods and unique furnishings, including an eye-catching wine display.
