Max Fried, general manager of Freed’s Bakery of Las Vegas, is consolidating his two store locations under one roof.

Freed’s Bakery, a valley staple for more than 50 years, will bring all its operations under one roof when a new store opens this spring at the corner of Silverado Ranch Boulevard and Eastern Avenue.

Max Fried, grandson of founders Milton and Esther Fried and the company’s general manager, said the bakery will close its locations at 4780 S. Eastern Ave., near Tropicana Avenue, and 9555 S. Eastern Ave., near Richmar Avenue, when the new location opens to give all of Freed’s business one home.

“This is going to be the business we want to have for tomorrow,” Fried said.

Freed’s will continue to serve the custom cakes and baked goods that have earned it appearances on the Food Network and TLC, Fried said. But the new digs should allow the bakery to bring back some discontinued former favorites — coffee cake, in particular — Fried said.

The new store will be in front of the Target shopping center on Eastern Avenue, just south of Silverado Ranch Boulevard.

Construction is under way, and the bakery is aiming for a Feb. 1 opening, although that might be “a little optimistic,” Fried said.
