“It was time to change it up,” explained Michael. “This is my 26th restaurant, but I’ve never done a truly Parisian one. I have RN 74 in San Francisco, which is a salute to the Burgundy countryside, but that’s modern interpretations of regional French cuisine. I wanted the real deal.”
