The Cosmopolitan reveals all-star lineup for new restaurants

With David Burke's Venetian digs and Charlie Trotter's Restaurant Charlie at the Palazzo both closing recently, the Las Vegas restaurant scene has taken a little punch to the gut. But news from the upcoming Cosmpolitan of Las Vegas has whet our appetites once again.

This morning the new resort, which is slated to open later this year, released the names of the chefs behind its signature restaurants, and the list is nothing to sneeze at. The Cosmopolitan has recruited a roster of acclaimed chefs from both coasts, all new to the city of Las Vegas and sure to bring a new flavor to the Strip.

From New York comes Bruce and Eric Bromberg's Blue Ribbon, which has treated diners to an array of dishes as diverse as fried chicken, paella and tofu ravioli since the first location opened in 1992. Also hailing from Manhattan are Greek cuisine game changer Costas Spiliadis, bringing his delightfully simple food at Estiatorio Milos restaurant, and Italian master Scott Conant, who will open Scarpetta.

LA-based chef David Myers, who trained under masters like Daniel Boulud and three-Michelin-starred French chef Gerard Boyer before earning his own Michelin star as the chef and owner of Sona, will open Comme Ca. And finally, The Cosmpolitan will, of course, have a steakhouse — STK courtesy of The One Group.

An official for the Cosmopolitan said: “It’s a diverse list of culinary partners committed to creating an innovative neighborhood of dynamic restaurant experiences. There will also be an exclusive nightlife venue. These are concepts from some of America’s top chefs and restaurant brands.”

Possible restaurant and bar options for the casino resort, whose two 50-story towers are scheduled to open late this year, include a rooftop nightclub and pool day-/nightlife operation by Tao Group.
