Master chef Michel Richard’s Central has just opened for business at Caesars Palace as the first 24-hour, gourmet restaurant owned by the James Beard award winning legend. Chef Richard spoke exclusively with VEGAS INC about why he’s excited to open the restaurant, and why everybody simply must try his out-of-this-world lobster burger.
Why 24/7?
When we fly in at night, there’s never anywhere open where we’d want to go. Every hotel needs a 24/7 restaurant. It’s going to be great. We’ll serve thousands just for breakfast every day.
Why open in Las Vegas?
Opening a good American restaurant here was the dream of my life, since I moved to the United States 36 years ago. To me, it was a dream and now it’s a reality. I love Las Vegas.
Parting shot?
This will be a great location for business lunches, too. It’s such an open place that you can come and eat reasonably priced food here. At my restaurant in DC, businessmen and lawyers in ties are our main clientele. Come and try our lobster burger.
